Ingredients

  • 2 boneless, skinless chicken breasts (or chicken thighs)

  • 1½ cups long-grain white rice

  • 2 cups low-sodium chicken broth

  • 1 tablespoon olive oil

  • 1 small onion, finely chopped

  • 3 garlic cloves, minced

  • 1 teaspoon paprika

  • ½ teaspoon dried thyme

  • Salt and black pepper to taste

  • 1 cup frozen peas and carrots

  • 2 tablespoons butter

  • Fresh parsley for garnish

Directions

  • Sauté the Aromatics:
    Pour in 1 tablespoon of olive oil and turn on the Instant Pot to sauté mode. Then, add in chopped onion and cook for about three minutes or until softened. Add garlic, and sauté for an additional 30 seconds until fragrant.
  • Season the Chicken:
    Cut the chicken dry, then sprinkle with paprika, thyme, salt and black pepper. Drop it in the pot and sear both sides for about two minutes. It’s a great way to add more flavor without really adding any time.
  • Add Rice and Broth:
    Add the chicken broth to the pot, and scrape up any bits stuck on the bottom. Add the rinsed rice and distribute it evenly. Put the chicken on top and don’t stir too much.
  • Pressure Cook:
    Put on the lid and switch your valve to seal. Pressure Cook at High Pressure for 10 Minutes, then Natural Release for 10 minutes Manually/quickly release any leftover pressure.
  • Finish the Dish:
    Take the chicken out, and cut or pull it into bite-sized pieces. While the rice is still warm, stir in the frozen peas, carrots and butter. Transfer the chicken back to the pot, mix gently, and garnish with parsley before serving.

Notes

  • Rinse the rice before cooking to remove excess starch and keep it fluffy.
    Use long-grain white rice for the best texture and even cooking.
    Chicken thighs can be used instead of chicken breasts for a juicier result.
    Avoid using instant or pre-cooked rice, as it can become mushy in the Instant Pot.
    Deglaze the pot after sautéing by scraping the bottom with the broth to help prevent the Burn warning.
    Let the pressure release naturally for about 10 minutes before opening the lid to keep the chicken tender.
    Stir in frozen vegetables after pressure cooking so they stay bright and slightly crisp.
    Add a splash of chicken broth or water when reheating leftovers to keep the rice moist.
    Fresh parsley, grated Parmesan, or a squeeze of lemon juice makes a great finishing touch before serving.
    Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.

Best Chicken to Use

Boneless skinless chicken breasts are the most common type because they cook quickly enough to become shreddable right after pressure cooking. And if you want a richer flavor and more tenderness, boneless chicken thighs are a fantastic choice. 

They’re juicy even if they’re overcooked a touch. You can also use bone-in chicken and will simply cook longer because of it. 

Do be sure to use fresh chicken or fully defrosted chicken, regardless of what cut you’re using; the texture is better, and the cooking will be more even.

Choosing the Right Rice

Rice is one of those things that can really change the end outcome. Long-grain white rice is the ideal choice, as it cooks up fluffy and dry. Another top choice is jasmine rice if you enjoy a gentle, fragrant taste. 

Brown rice is also usable; it just requires a little extra cooking time and additional liquid. Do not use instant or precooked rice as this fluffs up very quickly and can disintegrate or become mushy in the Instant Pot. 

Soaking, rinsing & washing helps with removing residual starch so that the grains cook up separately.

Spices with the best Flavour

With very little seasoning, you can make this dish thick and comforting all alone. This flavor base is just a mixture of garlic, onion, a little paprika, black pepper and just a touch of salt that adds flavor without masking the chicken itself. 

Dried herbs like thyme, oregano or Italian spice let it have a warm flavor Lemon juice at the end to brighten flavors and freshly chopped parsley give color and much-required freshness. 

The spiciness is caught with a sprinkle of red chili flakes or Cajun seasoning which suits people who want a little spice.

Divide the cooled chicken and rice into freezer-safe containers or zip-top freezer bags if you want to store it for longer. Freeze for up to 3 months. Put a date sticker on each container so you know when it was put in storage. To get the same texture, thaw in the fridge overnight then reheat.

Best Way to Reheat Without Drying Out

Add 1–2 tablespoons of chicken broth or water before reheating, because rice can dry out. Microwave in 30-second bursts, stirring after each burst and heating until warm. 

Reheating: You can also heat it in a covered pan on a low flame on the stove. A little butter at the end helps restore its creaminess and freshness. That quick trick keeps chicken moist and rice soft, ensuring the leftover meal tastes close to fresh.
