Easy Shrimp Pasta Salad Recipe

I made this shrimp pasta salad recipe for the first time on a warm weekend when I wanted something substantial without spending a lot of time in the kitchen. I had some pasta, some fresh veggies, and a bag of frozen shrimp in my refrigerator. I was shocked at how good it turned out after combining everything with a straightforward homemade dressing.

Every bite was expertly coated by the dressing, the shrimp remained juicy, and the vegetables provided a delightful crunch. Since then, this has grown to be one of my favorite meals that I prepare ahead of time because it tastes even better when refrigerated. The versatility of this shrimp and pasta salad is one of its best features. It can be served as a side dish at barbecues, eaten for lunch, or even used as the main course for dinner. It is both impressive and easy enough for novices to serve guests.

How to Make Shrimp Pasta Salad:

How to Actually Prepare Shrimp Pasta Salad: You can throw this shrimp pasta salad recipe together in under thirty minutes.

Step 1: Cook the Pasta

Place a large pot of water onto a boil with some salt. Prepare your preferred short pasta according to package directions until just tender. Drain and rinse immediately under cold water to halt the cooking process. Let it cool completely.

Step 2: Cook the Shrimp

If you are using raw shrimp, sprinkle lightly with salt and pepper. In a pan, heat some olive oil over medium heat and cook the shrimp for about 2 minutes on each side until they are pink and well cooked. Tango over to the plate and cool-down time. If you are using cooked shrimp here, just thaw and dry them.

Step 3: Prepare the Vegetables

Chop the celery, cucumber, red onion and bell peppers into small chunks. Chop some fresh parsley or dill to give it that little touch.

Step 4: Make the Dressing

In a mixing bowl combine:

  • Mayonnaise
  • Sour cream or Greek yogurt
  • Dijon mustard
  • Lemon juice
  • Garlic powder
  • Salt
  • Black pepper
  • A pinch of paprika

Whisk until smooth and creamy.

Step 5: Mix Everything Together

In a large bowl combine:

  • Cooked pasta
  • Shrimp
  • Chopped vegetables
  • Fresh herbs
  • Drizzle the dressing on top and gently toss to combine.

Step 6: Chill Before Serving

Refrigerate for an hour, covered. This helps the flavors all meld together nicely. Serve naked and sprinkle with extra parsley; serve it with a squeeze of fresh lemon.

What’s the Best Pasta to Use for Shrimp Pasta Salad?

My favorite choice is rotini because the twists catch plenty of dressing in every bite. Bow tie pasta also looks beautiful and has a nice texture. Small shells work well because they hold little pockets of creamy dressing, while elbow macaroni is perfect if you’re making a classic shrimp macaroni salad. Whatever pasta you choose, avoid overcooking it. Slightly firm pasta stays fresh longer and doesn’t become mushy after mixing with the dressing.

How Do You Keep Your Pasta Salad from Being Dry?

One common problem with any shrimp pasta salad is that it can dry out after sitting in the refrigerator. After making this recipe several times, I’ve found a few simple tricks that always work.
First, don’t overcook the pasta. Overcooked pasta absorbs too much dressing and becomes soft.
Second, rinse the cooked pasta with cold water and let it cool before adding the dressing.
Third, pasta naturally absorbs moisture as it chills. Before serving leftovers, I usually stir in one or two tablespoons of mayonnaise, Greek yogurt, or a splash of lemon juice to bring back the creamy texture. Finally, always store the salad in an airtight container to prevent it from drying out.

How Long Does Shrimp Pasta Salad Last in the Fridge?

Properly stored in an airtight container, shrimp and pasta salad stays fresh for about 2 to 3 days in the refrigerator. Since this recipe contains seafood and mayonnaise, it’s best not to leave it at room temperature for more than two hours. I actually think the salad tastes even better the next day because the shrimp and vegetables soak up all the dressing flavors overnight. Just give it a gentle stir before serving and, if needed, mix in a spoonful of mayonnaise to refresh the texture. I don’t recommend freezing this recipe because the creamy dressing can separate after thawing, and the vegetables lose their crisp texture.

Some Tips:

Shrimp macaroni salad is very simple to make but if you try these few tips, grab a bowl and enjoy this salad even more.
Use Good-Quality Shrimp: Use either fresh or frozen shrimp. Just make sure you defrost and dry them before cooking.
Don’t Overcook the Shrimp: Shrimp cooks very quickly. Leave it on the heat for a couple of minutes and remove it immediately when pink and curved inwards.
Chill Before Serving: Resting in the fridge for at least 1 hour allows the salad to be festooned by this tart, salty, harmonizing property of the dressing coating most ingredients.
Add Fresh Herbs: Fresh parsley or dill freshens the salad up a bit.
Taste Before Serving: Always, always taste for seasoning again before serving the salad after letting it chill. Sometimes it needs a pinch more salt and pepper and some lemon juice.
Make It Healthier: For a lighter version while still maintaining the creamy texture, simply swap half the mayonnaise for plain Greek yogurt.
Add More Vegetables: You can add some very nice things like cherry tomatoes, peas and corn (everything organic), as well as avocado or diced broccoli.
Keep the Dressing Creamy: Spoon in a tablespoonful of the mayo/yogurt at the last minute to freshen it up if keeping it longer than 3 hours.
